About
Founded in 1916, the brewery describes itself as Japan’s southernmost natural-method sake brewery. Because the climate is warm, it controls fermentation with large amounts of ice, and since 2017 it has grown its own Yamada Nishiki in Tsunagi. Shuwari, the product we handle, is a 6% sparkling nigori, an easy first sake.
