About
Founded in 1912 on the banks of the Yoshino River; the brand is Hanatomoe. Since 2017 every sake has been made without added yeast, using the brewery’s own wild yeast and traditional starters such as mizumoto and yamahai. The style embraces acidity, and some sakes are brewed in Yoshino-cedar tubs.
