Merlot from Arida City, Wakayama, fermented with wild yeast and bottled unfiltered. Refreshing, with a good balance of acidity, sweetness and a hint of bitterness, its fruit and acidity linger long in the glass and it opens up 15 to 20 minutes after uncorking; easy to pair with Japanese cuisine (sulfites kept to a minimum).
